Golden Couscous Salad

1 10-oz box plain couscous
2 Tbsp olive oil
2 cups chicken broth
1/2 tsp ground cumin
1 tsp tumeric
1/3 cup slivered almonds, toasted
1/4 cup dried apricots, chopped
1/4 cup raisins
2 Tbsp parsely, chopped
1 tsp grated lemon zest
1 tsp lemon juice
1. Prepare couscous with 1 Tbsp oil, according to the package directions, substituting chicken broth for the water and adding cumin and tumeric. Cover and refrigerate until cold.
2. Stir in remaining ingredients. Refrigerate until ready to serve.
TIPS: You may replace the dried apricots with your favorite dried fruit for a variety.
